A bowl of Mac and Cheese

Spinach Mac & Cheese!


  • Unsalted butter: 3 tbsp
  • Minced yellow onion: ½ cup
  • All-purpose flower: 1/3 cup
  • Whole milk (room-temperature): 4 cups
  • Coarse salt & ground pepper
  • Curly or flat leaf spinach – trimmed, washed, & cut crosswise into ½ inch thick strips: 2 bunches (about 1 ¾ pounds total)
  • Gruyere cheese (grated): 5 ounces (2 cups)
  • Elbow macaroni, cooked to package instructions: ¾ pound


  • Melt butter over medium in large saucepan
  • Add onion & cook until translucent (approximately 6 mins)
  • Whisk in flour and cook. Stir often until mixture is pale gold with a nutty odor (approx.. 2 mins)
  • Add 2 cups milk while constantly whisking
  • Add the rest of the milk (2 cups), bring the heat to medium-high, and whisk until smooth
  • Add salt & pepper to season ‘
  • Cook until sauce comes to a boil while whisking constantly (about 8-10 mins)
  • Bring heat to low & gently simmer. Stir occasionally until sauce thickens (13-25 mins)
  • Add the spinach and cook. Stir constantly until wilted (approx.. 3 mins)
  • Add cheese + stir until melted (approx.. 2 mins)
  • Add cooked macaroni & stir until combined
  • Serve immedieately!
