Easy Salad Idea #1: Herbs and Toasted Almonds

Boston Lettuce Salad with Herbs and Toasted Almonds

Serves 4, Total Prep Time: 5 min, Hands-on Time: 5 min


  • Sliced almonds: 1/4 cup
  • Boston or Bibb lettuce (leaves torn): 1 large head (6 cups)
  • Fresh parsley leaves: 1 cup
  • Fresh cilantro leaves: 1 cup
  • Chives, cut into 1-inch lengths: 10
  • Lemon and shallot vinaigrette (or bottles Italian vinaigrette): 4-5 tablespoons


  • Heat oven to 400° F
  • Spread almonds on rimmed baking sheet & toast
  • Toss occasionally while toasting until golden (approximately 5-6 minutes)
  • In large bowl: toss lettuce, parsley, cilantro, chives, and almonds with vinaigrette
